Brussel sprouts are easy to prepare and go
well with roast dinners, such as roast chicken.
Here are the ingredients:
- Brussel sprouts
- Butter
- Toasted pine nuts (optional)
- Grated Parmesan cheese (optional)
Here are the steps to prepare the mashed potatoes:
- Clean and trim the Brussel sprouts, and cut crosses in the bases.
- Place the Brussel sprouts in boiling water for 5 minutes, then drain.
- Toss the sprouts with a knob of butter, and, if you want, some toasted
pine nuts (about 2 tablespoons full for each pound of Brussel sprouts, although
you can vary the amount to suit your preference),
and/or a little grated Parmesan cheese.
- Tip: You can prepare toasted pine nuts yourself by simply dry frying them
in a pan. Be careful not to burn them though!
