This is a nice, thick, mushroom-flavored soup that is easy to prepare and very enjoyable to eat. Here are ingredients:
  • Optional: Garlic (1 clove - crushed or finely chopped).
  • Finely chopped white mushrooms (4 ounces - 100 grams)
  • Finely chopped onions (2 tablespoons)
  • Optional: Celery (1 stalk, finely diced)
  • Chicken stock (1 can)
  • Cream (1 cup)
  • Butter
  • Flour (1 tablespoon)
  • Pepper
  • Salt
  • Optional: Fresh chives or thyme (for garnish)
Here are the steps to prepare the soup:
  1. Melt the butter in a pan. If using garlic, cook it in the butter for about 1 minute until it starts to turn brown. Add the mushrooms, onions and celery, and a pinch of salt and pepeer to the butter, and sautée for about 5 minutes.

  2. Add flour, stir it in, and continue to cook for about 1 minute more.

  3. Add chicken stock and cream, continuing to stir. Simmer for about another 5 minutes.

  4. If you want, you can garnish the dish with a little fresh chives and/or thyme.
