This is an easy-to-make potato salad.
Here are the ingredients:
- 1 pound (450 grams) of New Potatoes
- 1 red onion
- Olive oil
- White wine vinegar
- Mustard
- Ready-to-eat ham (optional)
Here are the steps:
- Thoroughly clean (scrub) the potatoes, removing all dirt and any loose bits of skin.
Do not peel.
- Place the potatoes in a pan and cover with salted boiling water.
- Simmer for about 20 minutes.
- Drain the potatoes, allow them too cool, and cut into quarters.
- Peel and finely chop the onion, and mix with the potatoes.
- Add a teaspoon of mustard, a dash of white wine vinegar, and drizzle with olive oil.
- If you wish, you can also finely chop some ready-to-eat ham, and add this to the salad.
- Mix the ingredients, and serve chilled.
