Corn on the cob is delicious and nutrious.
It is best eaten fresh (within 1 day of buying it).
Here are some tips for choosing corn:
- Look for freshest corn.
- If possible you should buy corn with the husks on it,
as this helps keeps the corn fresh.
- Fresh leaves are green and pliable.
- The silk on fresh corn is dry, not soggy.
Here are the ingredients for corn on the cob:
- Corn on the Cob
- Butter
- Optional: Seasonings or flavorings such as salt, lemon juice, or
hot sauce
(chilli sauce).
Here is how to cook corn on the cob:
- You can cook corn on the cob by boiling, steaming,
microwaving, or by barbecuing.
- If you intend to boil or steam, you should first
remove the husk and silk - you may find it easy to do so under
running water.
- If you intend to microwave or barbecue, you
should keep the corn in its husk.
- Here are the instructions for cooking the corn on the cob:
- To make Boiled Corn on the Cob:
- Half fill a large stockpot with unsalted water,
and bring the water to a boil.
- Add the corn to the water, and heat
until the water begins to boil again.
- Cover the pot, turn off the heat,
and leave undisturbed for about 10 minutes.
- You can vary the cooking time depending on how soft you like your corn.
Important:
When removing the corn from
the water, do so carefully using tongs. The water is still hot and could
burn.
- To make Steamed Corn on the Cob:
- Boil water in a steaming pot.
- Place the corn on the steaming rack or basket, and the rack/basket on top
of the steaming pot.
- Cover and cook for about 10 to 15 minutes (depending
on your steaming equipment and how soft you like your corn).
Important:
When removing the corn from
the steam, do so carefully using tongs. The steam and water will be hot and could
burn.
- To make Microwave Corn on the Cob:
- Clean-up the corn husks
by cutting away any excess silk (but do not remove the husk).
- Soak the corn cobs in a large pot of water for 30 minutes or more - note:
the corn must be completely submerged, but will float, so you will have
to use something to weigh them down.
- When the corn cobs are thoroughly
soaked, remove them from the pot, drain away all excess water, and place
on a microwave-safe plate.
- Microwave one or two corn cobs on full power
for about 7 to 8 minute (cooking time may vary depending on your microwave
and how soft you like your corn).
- Remove the corn from the microwave
(Important:
The corn and steam will be hot).
- Allow the corn to sit for about 10 minutes, then remove the husk. The
corn may still be hot, and you may find it easier to remove the husk and
silk under cool running water.
Important:
When removing the corn from
the microwave do so carefully. The corn will be hot, and the corn and steam
can burn.
- To make Barbecued Corn on the Cob:
- Clean-up the corn husks
by cutting away any excess silk (but do not remove the husk).
- Soak the corn cobs in a large pot of water for 30 minutes or more - note:
the corn must be completely submerged, but will float, so you will have
to use something to weigh them down.
- When the corn cobs are thoroughly
soaked, remove them from the pot, drain away all excess water.
- Now cook the corn on your
barbecue grill.
- A charcoal barbecue grill,
with the lid on, should take about 10 to 15 minutes to cook the corn.
- A gas barbecue grill
should also take about 10 to 15 minutes on medium-high.
- Cooking time may vary depending on your grill and how soft you like your corn.
- To avoid charring, you may need to turn the corn about every 5 minutes, especially if using
a gas barbecue grill
- During the cooking process the outside of the husk may become brown or charred, but providing you
soaked the corns thoroughly before cooking, and remember to turn the corn cobs,
the inside should be nicely steamed.
- Remove the corn from the
barbecue grill
using tongs
(Important:
The grill and the corn will both be very hot).
- You should be able to peel away the corn husk like a banana -
you will need to hold the corn with a dish towel, and if the corn is still very
hot should do so under running water.
- There may ash or silk on the corn, this too can be removed under running water.
Important:
Barbecue grills and barbecued food can be hot and can burn.
Take care and take appropriate safety precautions.
- After the corn is cooked, smear it with butter. You can also flavor it
with salt, lemon juice or
hot sauce
(chilli sauce)
according to your preference.
