Scallops
Scallops are bivalved molluscs, mostly bottom dwelling. They are found in
all of the world's oceans, and there are many different species of scallops.
They are collected by scallop dredges or bottom trawls, or by divers, the latter
method being favored when possible since it results in less grit in the scallop
and less damage to the undersea environment.
Scallops have two types of meat in the shell, the adductor muscle, known
as the "scallop", which is white and meaty,
and the roe, known as the "coral"
which is usually red or pink, soft, and sometimes discarded.
Scallops eaten in many countries around the world, and are popular in both
European and Asian cuisine.
