How to Cook dishes from Jamaica
Jamaica is the most populous English-speaking island of the Caribbean,
and the third most populous English-speaking country of the Americas
(after the
United States and
Canada).
The island was a British colony until
1962, when
it achieved independence.
Despite a relatively small population (about 2.8 million of
2008),
Jamaica has made cultural contributions to the world far out
of proportion to its size, especially in the fields of literature and music (especially
reggae and ska music). Jamaica is also home to an interesting
and exciting cuisine, which is noted for its use of spices.
Some popular Jamaican dishes include:
- Salt fish and ackee - The dish is a prepared from salted cod and
ackee (which is a type of fruit).
The cod is washed and rehydrated. The ackee is boiled separately
(note: great care must be taken in preparing ackee, as if improperly prepared, unripe, or the wrong
parts of the fruit are used, it can be poisonous).
The two are then sautéed together, with tomatoes, peppers and spices.
- Jerk - A spicy fiery meat preparation.
Meat (pork, goat or chicken usually) is rubbed with "jerk spice", which is a mixture
of several spices including pimento (also known as "Jamaican allspices") and Scotch
bell peppers, and then cooked. Jerk is said to taste best if cooked on a
charcoal grill, but can be made
in a kitchen oven when this is not possible.
- Rice and peas - Rice with legumes. The rice is cooked with coconut milk, and mixed
with the legumes (usually pigeon-peas or red kidney beans).
- Curried goat or curried mutton - A curry dish made using goat's or sheep's meat.
- Coconut rundown - A spicy stew containing mackerel and coconut.
- Fried plantains
- Jamaican spiced bun - A bread bun prepared using spices to flavor it. It may be eaten with cheese or butter,
and is sometimes toasted.
- Bammy - A traditional Jamaican flatbread made from cassava. It is lightly fried in coconut oil,
dipped in coconut milk and then fried again.
